Rice paper and dried rice noodles made in Vietnam: Bamboo Tree and Safoco. Rounds at 16cm and 22cm, squares, the deep frying grade and the natural pandan and magenta colours, from 200g to 908g.
What this shelf covers
Rice paper is banh trang: a sheet of rice flour and water, dried on a mat, and rehydrated at the table. The 22cm round is the roll size, the 16cm is for smaller rolls and for children, and the square is for spring rolls that get cut. The deep frying grade is a different sheet and behaves differently in oil. Beside them sit the dried rice noodles, pho and bun, which are the same flour in a different shape.

Rice paper is Vietnamese, which is why it has a shelf of its own rather than a line under noodles, and why it sells to the Vietnamese diaspora and to every restaurant kitchen serving fresh rolls. It is dry, light and long life: 15 to 60 packs to a carton, no temperature control, and a good line for the last cubic metres of a mixed load.
